I "gravlax-i-sized" just about everything that swam in the ocean. Some fish worked brilliantly (ie - tuna, salmon, snapper, and most firm white fish. Some... like the Tilapia... was like eating cured sea scum) But nothing really beats a beautifully simple cure on good quality salmon.
